Preserved Restaurant is located in a restored historic home in the Lincolnville neighborhood of St Augustine. In this setting, Chef Brian Whittington showcases local farmers, artisans, and purveyors in the creation of his modern Southern menu. You will find that he uses the highest quality seasonal local and regional foods available. Sourcing is key to his offerings and you can view the most up to date listing on a dedicated ingredients page on his website. At the time of our visit, the current list included Bacon Select, Anson Mills, Congaree & Penn, GYO Greens, Cypress Grove, Cedar Key, locally caught fish and St. Augustine shrimp. 

It is apparent that Chef Whittington embodies a strong commitment to his community and sustainable food practices through his voice and through his actions.
