Located in the Sports district of Jacksonville, Manifest Distilling is a state of the art small batch distillery. In this facility spirits are being crafted with care and concern for local and sustainable practices.
Current production includes non-GMO potato vodka, organic Gin bottled and ready for purchase, and organic Rye Whiskey that is aging in barrels that line the distilling room wall. The Manifest Whiskey Project includes small batch exceptional regionally sourced spirits that are blended for the discriminating palate or a special gift. Their Gin is the first in the area bottled under organic certification.
All of the equipment is made in the USA and the production steps use recycling practices for water and spent grain. Organic grains, local honey and citrus make their way into the notes of these spirits. Future production may include spirits and liquors utilizing locally roasted coffee, home grown Mayhaws and Bird Peppers.
Owner, founder, and distiller David Cohen is taking exceptional care to provide his consumers with transparency in production and labeling. Step into the open gathering area and view production through the windows or sign up for a tour and tasting. Local products for purchase line the shelves and enhance your cocktail making adventures. David is working with another local distillery owner in St Augustine, Phil McDaniel, to revive The Craft Distillers Guild.
