Shai Tzabari, and his wife Charlotte, have developed a unique business in the processing and selling of pickles and olives at several farmers’ markets in Northeast Florida. The brines for pickles and olives are a handmade blend of spices. Shai also sells homemade kimchi (a blend of locally sourced carrots, cauliflower, cucumbers, and cabbage) and hummus at his booth.
Filling a niche in the artisan food scene here with in house cured products, Shai gathers his pesticide free and environmentally consciously grown produce from non-commercial, non-industrial family farms. While he does buy olives from New Jersey, Virginia and California out of necessity, he has recently cured his first batch from a neighboring GA olive grove. He has also cultivated a relationship with a farm that is growing his pickle cucumbers. His goal is two-fold: to increase Florida relationships so that his products is in the brining liquid in less than twenty-four hours after being picked and to give back to the community as much as he can by supporting farmers and protecting the environment.
